Incorporating a familiar local flavour to our cake in an absolutely delightful and refreshing way - After months of brainstorming and test bakes, we finally came up with the perfect marriage of flavours. Calamansi juice that all of us are so familiar with, paired with a light honey mousse and a tropical fruit – pineapple. The cake is then topped off with a buttery almond crumble for that extra texture.
